Gooey Butter Cake


Just saying the words
Gooey Butter Cake 
sounds delicious.
How can you go wrong with those three words?
Gooey  - Butter  - Cake


We had never heard of this cake 
until a few years ago.
Our friend Whitney made it and 
Debbie just had to have the recipe.
Thankfully, she shared.
Now we have learned that the recipe
 originated in St. Louis.
It was made by mistake.
All we can say is thank goodness someone goofed.

It is a very simple cake to make and tastes wonderful.


Start with a few basic ingredients.


This is the cake mix, eggs, and butter.


Stir the cake mix, eggs, and butter together.


This bottom layer will be fairly thick.
Spread it into a greased  9x13 inch pan.


Next comes the cream cheese, 
powdered sugar, and eggs.
Mix together well.


Pour over the first layer.
Bake in a 350 degree oven for about 25 to 30 minutes.


Fresh from the oven.


Gooey Butter Cake

Bottom layer:
1/2 cup butter
2 eggs
1 box yellow cake mix
  Top layer:
3 3/4 cups (1 lb. box) powdered sugar
8 oz. cream cheese, softened
2 eggs

Preheat oven to 350 degrees

Melt butter.
Mix together the cake mix, butter, and 2 eggs.

Spread in the bottom of a greased 9 x 13 inch pan.
Set aside.

Mix together 1 pound box of powdered sugar
 with 8 oz. softened cream cheese and 2 eggs.
 Mix until smooth.

Pour evenly over top of layer.

Bake for 25 to 30 minutes.
Better to be slightly underdone than overdone.
Sprinkle with a little powdered sugar.

Enjoy!


And we just couldn't help 
but drizzle a little caramel on one.
Yum.

Cheesy Scalloped Potatoes (Au gratin Potatoes)

Creamy, tender potatoes 
with gooey cheese between each layer.
A perfect side dish 
for a family meal or a big holiday dinner.
Easter is right around the corner
 and this dish would be ideal.


Let's start with some potatoes.
About 2 /12 pounds of them.
Sliced and then precooked
for a few minutes in boiling (salted) water.
Next melted butter and add flour 
to make a base for the sauce.
Add 1/2 and 1/2 and heat until warm
 and just starting to thicken.



Add salt and pepper then
whisk in one can of cream of potato soup
and the eggs.

 Of course, we need some cheese.
Love that cheese!


Swiss and Sharp Cheddar.
Freshly grated.


In a buttered casserole dish 
layer the potatoes, cheese, sauce and 
sprinkle each layer with salt and pepper.


If you would like to turn this from 
a side dish to a main dish 
add diced ham to each layer.
You now have Scalloped Potatoes and Ham.

 Finish the last layer with sauce and cheese.
Bake uncovered until golden and bubbly.


Delicious.

 
Cheesy Scalloped Potatoes 
(Au gratin Potatoes)

2 1/2 pounds potatoes, sliced
2 cups cheddar cheese, shredded
1 cup Swiss cheese, shredded
2 eggs, beaten
4 Tbsp butter
2 Tbsp flour
2  1/2 cups half and half
1 can cream of potato soup
salt and pepper

Preheat oven to 400 degrees.

Cook sliced potatoes in a big pan of 
boiling salted water for about 5 minutes. 
Drain.

In a small pan melt the butter.
Add the flour and stir for about a minute.
Add the half and half and cook until warm 
and just starting to thicken.
Remove from heat and whisk in the soup and eggs.

Mix the cheese together in a small bowl.

In a buttered casserole dish start with a thin layer of sauce.
Then layer:
potatoes,
cheese,
sauce,
salt and pepper.
Repeat for a couple more layers.
Ending with the shredded cheese.

Bake uncovered at 400 degrees for about 35 to 40 minutes.
Until golden and bubbly.

Nutella White Chocolate Chip Cookies

Warm cookies from the oven.
That sounds good.
With creamy white chocolate chips.
And Nutella.
A delicious chocolate hazelnut spread. 


Nutella?
What is Nutella?
It is a tasty, unique spread made from 
roasted hazelnuts, 
skim milk and a hint of cocoa.
Indulge in a spoonful or
a finger-full if you are like one
pint-sized Nutella lover in our family.


Dakota first fell in love
with Nutella on a crepe in Paris...
but crepe-making is time consuming.

So we made cookies instead!
With white chocolate chips, too.


What's better than chocolate batter?
Nutella batter.
Yum. Need we say more.


Toss in some white chocolate chips.
And it just keeps getting better.




Everything looks good with chocolate chips.


Ready for the oven.
 Bake for about 15 minutes.

And....Nutella cookies!


 Nutella White Chocolate Chip Cookies

1/2 cup butter
1 cup dark brown sugar
1/2 cup of Nutella
2 eggs
2 tsp vanilla
2 1/4 cup flour
1/4 tsp. salt
1/2 tsp. baking soda
1 cup white chocolate chips


Preheat oven to 350 degrees.

Melt the butter and let cool.
Add the brown sugar and mix well.
Stir in the Nutella and vanilla.
Add eggs and mix well.

Add the flour, salt, and baking soda.
Mix just until it is combined.
Stir in the white chocolate chips.

Scoop tablespoon size dough
 onto cookie sheet (we prefer AirBake).
Bake about 15 minutes.
Cool on a cooling rack.
